Recently listed in Travel + Leisure's "World's Best" Top 25 Hotels for the Caribbean, Bermuda, and the Bahamas, the secluded setting and tranquil ambience of Cobblers Cove, an English country house-style boutique hotel, is the perfect tropical hideaway for lovers.
Cobblers Cove features 40 luxury suites housed within 10 two-story cottages of four suites each. The main Great House features a sweeping "Gone With The Wind" staircase that leads to the two Specialty Suites — Colleton and Camelot, the ultimate in luxury, surrounded by lush gardens and well-manicured grounds. Cobblers Cove, one of only five Caribbean members of the prestigious Relais & Chateaux, prides itself on assuring their guests an intimate ambience that speaks the language of love. Fine dining, seclusion and quiet are priorities maintained to provide the ultimate haven for lovers and honeymooners or those seeking a peaceful respite.

Cobblers Cove, located 18 miles from Grantley Adams Airport on the Gold Coast in the Parish of St. Peter, received its name from the black sea urchin, which is called a "Cobbler" in Barbados. The property was built in 1943 by the Haynes family, one of the first families to settle in Barbados in 1647, and one of the island's original sugar barons. In 1968, Cobblers Cove was sold to another prominent sugar family, The Colletons, who were the original founders of South Carolina and instrumental in helping to shape the destiny of Barbados. A mural in the Colleton Suite commemorates the family history in Barbados.

Embracing its Bajan heritage, all of the bright, cheerful furnishings at Cobblers Cove are made on the island. Original steel from old island railway ties are used in its buildings, along with coral rock culled from the island itself; the architecture blends classic English, featuring a monarchy castle motif in the Great House, with informal Caribbean


comforts providing their guests with an elegant, yet relaxing, atmosphere.

Local delicacies are the focus of the Terrace's menu, whose mantra is,"serve fresh, serve local". By marrying British and French cuisine with fresh resources, Executive Chef Mike Taylor and Sous Chef Simon Jenkins present a unique and sophisticated five-course menu that changes daily. With an expanded à la carte menu, a traditional table d'hote continues to be available along with a new "light bites" menu that is available all day. A most delicious and refreshing addition to the menu is a variety of ice creams and sorbets made fresh daily with local ingredients.

The first paragraphs of this article is a description of the evening I enjoyed at The Terrace Restaurant. My fellow travelers and I were greeted by General Manager, Hamish and Linda Watson, who lead us to a lovely outdoor garden patio where they insisted we all try the legendary "Cobblers Cooler". This innocuous concoction looks innocent enough but try more than one and you might find yourself on the wrong end of the conga line. The Cobblers Cooler is a delicious and dangerous combination of three ounces of local white and brown rum, fruit punch mix, peaches, pears, grapes, fruit cocktail fruit, a splash of Grenadine for colour, garnished with an orange slice and maraschino cherry.

We enjoyed tasty canapés with our Cobblers Coolers before moving to The Terrace Restaurant on the edge of the crescent beach, under a cozy thatched roof to savor a menu that was a delight to the palate.
